Like most living things, bacteria need oxygen to survive. If oxygen is removed from a product, bacteria cannot live and grow. No bacteria means no mold or mildew. No food spoilage. Chemicals do not become infected. By removing O2, all aerobic organisms are killed. (The only organisms not killed are anaerobic organisms, such as some viruses.) By controlling the amount of oxygen in the storage container, ripening can be controlled to a point where fruits and vegetables will mature and ripen at a perfectly controlled pace.
